If you saw my previous post about making sambal, then I will show you how to use sambal to make this amazing dish. ‘Penyet’ in Javanese means ‘crush’, so you literally crush whatever you put on your sambal – in this case, tofu (tahu in Indonesian) and tempe.
1 block of tempe
1 block of hard tofu
1 serving of sambal
Salt to taste
Vegetable oil to fry
- Cut your tofu and tempe into even sizes and coat them evenly with some salt.
- Fry your tofu and temple in vegetable oil until crispy and golden brown.
- Lay them over a freshly-made serving of sambal on a mortar and crush them (pictured) and let the sambal coat your tofu and tempe.
- Sprinkle your penyet with lime juice, and there you have it – simple, spicy and refreshing penyet dish.
