The next side dish for nasi uduk that I am introducing is omelette with chives. This is a must to add to your rice because it is really easy and fast to make – plus, you probably already have all the ingredients in your fridge!
Even though I prefer using chives with my omelette, you can mix up other ingredients too, like spring onion or parsley. Cooking is most enjoyable when you follow your instict more than a recipe, so if you want to put, say, strawberries in your omelette, then go ahead! (Tell me if you’re really doing it because I do want to know how it turns out).

The ingredients you need to make omelette with chives:
Around 2 tbps chives
1 tbsp milk
Salt and pepper to taste
1 tbsp cooking oil
Steps to make omelette with chives:
- Beat your eggs and add in sliced shallots and chives. Mix well.
- Add in milk to add extra fluffiness. Season the eggs with salt and pepper.
- Fry the eggs in a bit of oil. You can use any technique you like, and when it’s cooked put it on a plate and cut it up with a scissor to make eating it easier.
