My Ultimate Comfort Food: Chinese Tomato Egg

The curry recipe I posted yesterday was a comfort food, but this one is the ultimate comfort food for me. When I first went to college abroad, I didn’t eat it for months and I was literally dying. Because of that, I tried to recreate this dish that my family had been making for ages. Turns out, it was easy, hearty and it reminded me of home. Perfect if you are too tired and lazy but you still want to eat a delicious meal to end your day.

3 shallots, sliced

2 cloves of garlic, sliced

Red chillies, sliced (optional)

2 tomatoes (or 1 if you have a large one), chopped into tiny cubes

2 eggs

salt and pepper to taste

1 tbsp of cooking oil

 

You may notice that I put a lot of garlic and shallots. I just love the flavor and the smell of them, but you can totally use less. First, sauteé the sliced shallots, garlic and chillies in cooking oil until they are wilted and giving you great aroma. When they’re brown, throw in your fresh tomatoes (you can always used canned tomatoes but I always prefer fresh ones). Cook this until the tomato is soft, and put in salt and pepper.

IMG_20160621_164134When it’s done, turn down the heat and throw in your eggs. Mix everything together in the pan and cook until the eggs set. I like to leave it a little runny, but some people like their eggs to be well done 🙂 If you like your tomatoes chunky, you can cook the mixture less too. Serve your eggs with steaming rice, a blanket and your favorite TV show.
